#03 – Curry Crusted Sweet Potato

Well well here we are, its round 3 and another successful Monday Night Cooking Night. Today we have Curry Crusted Sweet Potato, this is sweet potatoes and you wrap stuff around it then put it in the oven.

Ingredients

Firstly you will need all this stuff, most of it is pretty normal but I skipped a few things – chilli because I dont like it, breadcrumbs and coconut because they didnt have any in the shop, also ‘garam masala’ because no idea what that is.

  • 2 sweet potatoes about 150g each
  • salad leaves
  • curry paste:
    • 5cm of fresh ginger – not really sure what 5cm means just used a lump
    • 2 garlic cloves
    • 1 lime
    • 8 sun dried tomatoes – they only had ‘sunstream vine’ i figure this is about the same!?
    • 30g coriander – this seems like an insane amount but ok
    • 1 teaspoon salt
    • 1 teaspoon cumin

The Method

So again this is very easy to do:

  • pre heat oven to 200
  • put potatoes in microwave for 10 mins
  • cut up all the stuff for ‘curry paste’
    • only give it a few short bursts in the blender, its meant to be a ‘thick paste’
    • lime is squeezed over obviously
  • cut 2 squares of tin foil and line with some olive oil
  • put the potatoes on, cover in the paste and wrap around with the tin foil
  • put in oven for 30 minutes
  • doo doo doo sit and watch seinfeld or something
  • eat it

This was another very successful adventure, pretty easy to make although a bit messy. I remember making this before and I did what they say which is squeeze all the stuff around the potatoes with your hands…this time I just poured it over out the mixing bowl and squeezed it with the foil. This seems smart to me. It tasted really good and just a little bit spicy so nice with lots of cold salad.

This is definitely one that could be added to regular rotation, relatively simple to make and very nice.
